Ah, I probably didn’t make it as clear as I’d liked to :D I know that Christians didn’t eat people or animal sacrifices, I just imagined how a misunderstood statement of Jesus might resulted in a crazy ritual such as Eucharist, and even if it may have been more an allegory (though transubstantiation theology is pretty weird if you ask me), how an average Roman citizen might misunderstood it even further down the line and view it as plain cannibalism.
As for Jesus being an Essene, I have my doubts about it, but I wonder what he was doing during those 40 days in desert. That seems like something an Essene would do. Anyway, pretty good summary why Jesus was most probably not one, can be found here.
“No bishop, no king” — this one I hear for the first time. As far as I know, as early as 2nd century AD, Christians already had a plethora of bishops with pretty diverse theology. So, I’m not sure where that Renaissance part fits in.
